Would it be easy to teach myself how to read Greek? I can't speak the language?
Yeah, I can't speak the language but I want to be able to read and write in it (I guess I would just transliterate English to the Greek system of writing).
Is it easy? Can I teach myself? Or will I need to get a teacher/take a class?
I know some languages are difficult to learn to read simply because there are so many exceptions when it comes to reading them. However, keep in mind that I am pretty adept when it comes to learning/reading different languages.

Well, you will be able to read and write it, if you learn the alphabet. This is pretty fast and easy, you usually should have it in mind in two days – university courses expect their participants to learn the alphabet until the next day, so two days would be fine. The greek alphabet is not hard to learn or write, you already know some letters from mathematics and it is pretty fast – no comparison to the russian or arabic alphabet which is really difficult to remember.
If you want to learn the language you would need a teacher. I took a bit classical greek in school and it is not that difficult if you’ve learned ancient latin before, but greek has lots of grammar and as there are quite some things the english language does not know, it might be very hard to learn the language alone, if you want to be able to speak it one day – if you just want to know a bit, you could try by yourself.

I think it is very difficult to learn a new language by yourself, specially Greek. You can start learning some vocabulary, but you will need someone to teach you. You can also try this website http://www.livemocha.com
