Evaluation is ascertaining your talent and caliber and determining your level with a prerequisites the company has for a certain kind of job/role.
Every job has a role and a certain challenges. The management predetermines those challenges and sets a standard for selection out of many candidates applying for a job. When you apply, the HR managers tally your level with that of the prerequisites they have, and then make a decision to wither select you or reject you.
For example: You are a Greek-English interpreter. Your talent will best utilised in this kind of role, if you apply for being a chemical engineer, your talent does not match with those of the prerequisites and will be rejected.
It sounds like "evaluation" in this sense means that they would like to get an idea of your linguistic skills. Normally, being highly proficient is adequate. There may be certain words and phrases that you may not be familiar with, but if you speak Greek as a first language, I doubt that you will have anything to be concerned about.
