What does it mean when I hear someone sing what sounds like ah-PUP-seh?

Thank you for an answer. To say "this evening" can't you say:
αυτή νύχτα
Is απόψε something like the more ancient way?

απόψε (apopse) = tonight/this evening
This is a common word, a very good one to know.

σήμερα το βράδυ (simera to vradi) would be the closest alternative for απόψε
The Modern Greek απόψε comes originally from από + οψέ. The preposition από you probably know means "from", "after" when in reference to time. Οψέ is an ancient Greek adverb meaning "late" or "late in the day". So απ’ οψέ means literally "from/after late [in the day]".
